Warm Brie layered with apples, almonds, dried cranberries, brown sugar, and cinnamon. Simple, pretty, and very little fuss.
Ingredients
- ½ medium apple
- ¼ cup sliced almonds
- ¼ cup sweetened dried cranberries
- 1 tbsp packed brown sugar
- ¼ tsp cinnamon
- 1 tbsp butter or margarine, melted
- 1 round (4 in.; 8 oz) Brie or Camembert cheese with rind, room temperature
- Apple wedges or assorted crackers, for serving (optional)
Directions
- Preheat the oven to 350°F (180°C). Chop the apple. Combine the apple, almonds, cranberries, brown sugar, and cinnamon; mix gently. Stir in the melted butter just until everything is moistened.
- Cut the Brie in half horizontally. Place one half, rind-side down, on a small oven-safe pan. Spoon half of the apple mixture over the cheese and spread evenly.
- Top with the remaining Brie half, rind-side up. Spoon the remaining apple mixture over the top.
- Bake for 12–15 minutes, or until the Brie begins to soften. Serve warm with apple wedges or assorted crackers, if desired.
Cook’s Tips
- Leave the rind on the Brie—it’s edible and helps the cheese hold its shape as it warms.
- An 8-oz wedge of Brie can be used instead of a round.
- Golden raisins or dried cherries can be substituted for the dried cranberries.
Pesto & Mushroom Variation
Chop 4 oz mushrooms (about 1 cup) and ½ cup seasoned croutons. Cook the mushrooms in 2 tsp olive oil over medium-high heat for 2–3 minutes. Remove from the heat, then gently mix in the chopped croutons and ¼ cup prepared basil pesto. Use this mixture in place of the apple-cranberry mixture, assembling and baking the Brie the same way. Garnish with red bell pepper strips, if desired.
