Creamy, buttery mashed cauliflower with chives and bacon. I like mine with a little texture, but you can make it as smooth as you want.
Ingredients
- 2 heads cauliflower
- 1 cup water (for pressure cooking)
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp chives
- ½–1 brick cream cheese (4–8 oz), to taste
- Butter, to taste
- Cooked, chopped bacon, for topping
Directions
- Trim away the thick stem and outer leaves from the cauliflower, then wash well. Cut into pieces that fit comfortably in the Multi Cooker.
- Pour 1 cup water into the inner pot. Add the rack if you want to keep most of the cauliflower above the water; the rack is optional. Add the cauliflower.
- Secure the lid and pressure cook on Custom for 3 minutes. When cooking ends, carefully perform a manual pressure release according to the cooker instructions.
- Transfer the cooked cauliflower to a serving bowl, draining away excess water. Mash with a Mix ’N Masher to your preferred texture.
- Stir in the cream cheese, butter, salt, pepper, and chives while the cauliflower is warm. Adjust cream cheese and butter to taste. Top with cooked chopped bacon.
Laura’s Tip
I like a few chunks in mine. If you want it really smooth, keep mashing or use an immersion blender. Drain well first so it doesn’t get watery.
