Savory breakfast sausage, peppers, onions, fluffy eggs and Monterey Jack cheese, topped with golden tater tots. Perfect for brunch or breakfast-for-dinner!

Prep: 15 minutes | Cook: 45–50 minutes | Serves: 10

Ingredients

  • 1 lb mild pork breakfast sausage
  • 12 oz frozen chopped onions and bell peppers
  • 6 eggs
  • 1 cup half-and-half
  • 8 oz Monterey Jack cheese, coarsely grated (about 2 cups), divided
  • ½ tsp salt
  • ½ tsp black pepper
  • 32 oz frozen tater tots

Optional: Sliced green onions and salsa

Directions

  1. Preheat oven to 425°F.
  2. Brown sausage in a large skillet over medium heat for about 5 minutes, breaking into crumbles. Add frozen peppers and onions and cook about 5 minutes more, until sausage is cooked through and vegetables are tender.
  3. Whisk eggs, half-and-half, 1 cup cheese, salt and pepper in a medium bowl.
  4. Spread sausage mixture in a Stone Rectangular Baker. Pour egg mixture over it.
  5. Arrange frozen tater tots in one layer on top and sprinkle with remaining cheese.
  6. Bake 45–50 minutes, until bubbly and golden, with the eggs set and center at 160°F.
  7. Top with green onions and serve with salsa, if desired.

Cook’s Tips

Fresh vegetables: Substitute 1 large chopped onion and 1 large chopped red bell pepper for frozen vegetables.

Extra spice: Try Pepper Jack instead of Monterey Jack.

Make ahead: Assemble through adding the egg mixture, cover and refrigerate overnight. Keep tater tots frozen separately. Add frozen tots and remaining cheese just before baking; allow additional baking time as needed.
