Apple Pie Steel-Cut Oats in the Deluxe Multi-Cooker

Apple pie for breakfast? Well, close enough! Warm apples, cinnamon, maple syrup, and hearty steel-cut oats make this a cozy breakfast without standing over the stove stirring. My Multi-Cooker gets to do the work while I get on with my morning.

Serves about 4Prep: 10 minutesPressure cook: 10 minutesNatural release: 10 minutes

Ingredients

  • 1 cup steel-cut oats, rinsed
  • 2 cups water
  • 1 cup oat milk or another nondairy milk
  • 1 tablespoon coconut oil (optional)
  • 2 tablespoons maple syrup, or more to taste
  • 2 apples, cored and chopped
  • 1½ teaspoons Cinnamon Plus spice blend, pumpkin pie spice, or ground cinnamon
  • 1½ teaspoons double-strength vanilla extract
  • ¼ teaspoon salt (optional)

Directions

  1. Place the rinsed steel-cut oats in the stainless-steel inner pot of the Deluxe Multi-Cooker.
  2. Add the water and nondairy milk. Stir in the coconut oil and maple syrup.
  3. Core and chop the apples into bite-sized pieces. Leave the skins on if you like, and add them to the pot.
  4. Add the cinnamon or spice blend, vanilla, and salt. Stir to combine.
  5. Lock the lid, select the Whole Grain setting, and set the cooking time to 10 minutes.
  6. After cooking, allow 10 minutes of natural pressure release. Carefully release any remaining pressure following the appliance instructions.
  7. Open the lid and stir. The oatmeal thickens as it stands. Serve warm.

Make It Your Own

Want it sweeter? Add another drizzle of maple syrup. Top with chopped walnuts, pecans, fresh fruit, or a little extra cinnamon. If it’s thicker than you like, stir in a splash of oat milk.

Make-Ahead Tip

Portion leftovers into individual containers and refrigerate for up to four days, or freeze portions for later. Reheat with a splash of nondairy milk to loosen the oats.
