Tacos are already pretty hard to argue with, but baking a whole batch at once makes them even better. Crispy shells, warm chicken filling, melted cheese—and everybody gets fed without you standing at the stove assembling tacos one at a time.
I adapted this one from The Cookie Rookie, but like most recipes I make, I treat the original as a place to start. A recipe is a guide. Cooking is the art.

Here’s the Recipe

Make It Your Own
Use the recipe as your starting point, then make the tacos work for your kitchen and the people you’re feeding.
Change the chicken: Rotisserie chicken, leftover cooked chicken, or chicken you’ve meal-prepped all work.
Change the cheese: Use your favorite good melting cheese or combine a couple of them.
Change the heat: Keep them mild for the whole family or add jalapeños, hot sauce, or a spicier salsa if you want more kick.
Change the toppings: Lettuce, tomatoes, avocado, cilantro, sour cream, salsa—put out what you like and let everyone finish their own.
Laura’s Tip
The recipe gets you started. Don’t be afraid to change it. Use what you have, adjust the flavors, and make it fit your family. That’s the difference between following a recipe and actually learning to cook.
