I love a dinner that involves throwing everything on one pan and letting the oven do most of the work.
This one has gnocchi, sausage, and plenty of veggies—and the best part is you don’t even have to boil the gnocchi first. It cooks right on the sheet pan.
The original recipe uses chicken sausage, broccolini, and cherry tomatoes. I used zucchini and bell peppers instead because that’s what sounded good to me. Recipes are allowed to have a little flexibility.

My Version
Serves 4 | About 30 minutes
- 12 oz. cooked sausage, sliced into ½-inch rounds
- About 3½–4 cups assorted chopped vegetables (I used zucchini and bell peppers)
- 1½ cups shelf-stable gnocchi
- 2 tbsp. olive oil
- ½ tsp. kosher salt
- ¼ tsp. black pepper
- 1 tsp. Italian seasoning
- 1 tsp. garlic powder
- 1 tsp. onion powder
- Parmesan cheese, for serving
Direction
- Heat the oven to 425°F.
- Add the sausage, gnocchi, and vegetables to a bowl. Drizzle with olive oil, add the seasonings, and toss until everything is coated.
- Spread everything in a single layer on a sheet pan. Give it some room—crowding the pan makes things steam instead of roast.
- Roast for about 20 minutes, stirring halfway through, until the gnocchi is tender and everything has some nice color.
- Top with Parmesan and serve.
Make It Your Own
This is one of those recipes where I look at the ingredient list more like a suggestion than a contract.
I used zucchini and bell peppers, but use what you like—or what needs to get out of your refrigerator.
Broccoli, asparagus, mushrooms, onions, cherry tomatoes, Brussels sprouts…they can all work. Just remember that harder vegetables may need a little more cooking time while softer vegetables cook faster.
And don’t get hung up on chicken sausage. Italian sausage, turkey sausage, smoked sausage—use the sausage you like.
That’s what I love about sheet-pan dinners. Once you understand the basic idea, you don’t really need to make the exact same dinner twice.
Laura’s Tip
Don’t boil the gnocchi first. Really. Put it straight on the pan.
And don’t overcrowd everything. You want the ingredients to roast and brown, not sit there having a little steam bath.
