If you hear “cabbage” and immediately think boring side dish, this one would like a word.
Ground beef, andouille sausage, peppers, Cajun seasoning, and cabbage all cook together into a hearty one-pot dinner with plenty of flavor and a little heat. This is cabbage with an attitude.
Watch Me Make It
What’s in it
- Ground sirloin and andouille sausage
- Green cabbage
- Red and green bell peppers, celery, scallions, and garlic
- Tomato paste and Cajun seasoning
- Chicken broth
- Cider vinegar
Make It Your Own
Change the sausage: Andouille brings the Cajun flavor and heat, but another smoked sausage can work if that’s what you have.
Adjust the spice: Cajun seasoning blends vary a LOT. Start with less if yours runs hot or salty, then add more after tasting.
Change the vegetables: Bell pepper colors are not a contract. Use what you have, and if you’re a vegetable person, this dish can handle extras.
Make it stretch: Serve it with rice or cornbread if you want to turn six generous servings into an even bigger meal.
Laura’s Tip
Don’t rush the cabbage. Give it time to cook down and get tender while it soaks up all that sausage, Cajun seasoning, and broth. And definitely taste before adding extra salt—the sausage, broth, and seasoning may already be doing plenty.
