This one takes time—and that’s the whole point. Season it, let it sit overnight, then let the slow cooker do its thing until the brisket is tender enough to slice.
Ingredients
- 2 tbsp brown sugar
- 1 tbsp smoked paprika
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tbsp steak & burger seasoning
- 1 tsp Cajun seasoning
- 1 tsp salt
- 1 tsp black pepper
- 1 flat-cut beef brisket (4–5 lb.)
- ¼ cup yellow mustard
- 2 large onions, sliced
- 1 cup low-sodium beef broth
- 1 cup beer
- 1 tsp liquid smoke
Directions
- Combine the brown sugar, smoked paprika, garlic powder, onion powder, steak & burger seasoning, Cajun seasoning, salt, and pepper.
- Pat the brisket dry. Brush it all over with yellow mustard, then coat every side with the seasoning mixture.
- Place the seasoned brisket on a tray, cover, and refrigerate overnight.
- Add the sliced onions, beef broth, beer, and liquid smoke to the slow cooker. Set the brisket on top.
- Cover and cook on LOW for 8–12 hours, turning the brisket every 2–3 hours, until fork-tender but still sliceable.
- Transfer the brisket to a cutting board and let it rest for 15 minutes. Slice against the grain.
- Optional: For caramelized edges, brush with barbecue sauce and broil for 5–6 minutes, or broil without sauce for 6–8 minutes until the edges are as charred as you like.
Why the Mustard?
The mustard acts as a binder, helping the dry rub stick to the brisket instead of falling off during handling and cooking. And no, your brisket won’t taste like mustard.
Does the Beer Matter?
Yep. Different beers will change the flavor of your brisket.
- Stout or Porter: Deep, roasted flavor that works really well with rich, smoky beef.
- Brown Ale or Bock: Adds a little nutty, caramel sweetness.
- Lager: Clean and mild if you don’t want the beer flavor taking over.
- IPA: I’d skip it. Hoppy beers can become bitter during a long cook.
No beer? Use additional beef broth instead.
Why Low and Slow?
Brisket is a tough cut with lots of connective tissue. Long, gentle cooking gives it time to become tender. This is not the recipe to get impatient with and crank to HIGH.
What I Served With It
I served the brisket over Pampered Chef’s Mushroom & Thyme Grits. Creamy grits + tender brisket = very good life choices.
