Low-Carb Chicken Pizza Crust

This easy, protein-packed pizza crust uses just three ingredients. Add your favorite toppings for a low-carb pizza night!

Prep: 10 minutes | Cook: 24–30 minutes | Serves: 2–4 depending on toppings

Ingredients

  • 1 can (10 oz) chicken breast, drained
  • 1 oz grated Parmesan cheese (about ¼ cup)
  • 1 large egg

Optional: Pizza sauce, cheese, vegetables and cooked meat toppings.

Directions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper for the initial drying step.
  2. Drain chicken thoroughly, pressing out as much moisture as possible.
  3. Spread chicken evenly on the baking sheet and bake 10 minutes to dry it out.
  4. Transfer chicken to a mixing bowl and increase oven temperature to 500°F.
  5. Add Parmesan cheese and egg. Mix until combined.
  6. Spread mixture into a thin, even crust on a baking surface rated for 500°F. Do not use parchment or silicone mats unless explicitly rated for this temperature.
  7. Optional: Use a spatula to shape a slight raised rim around the edge.
  8. Bake 8–10 minutes until firm and beginning to brown.
  9. Add desired toppings and return to oven for 6–10 minutes, until toppings are heated through and cheese is melted.
  10. Cool a few minutes before slicing.

Cook’s Tips

Remove moisture: Thorough draining and the first baking step help make a sturdy crust.

Keep it thin: An even, thin layer makes a firmer crust.

High-heat safety: Most parchment paper and silicone baking mats are not rated for 500°F. Check manufacturer temperature limits and use a suitable high-heat baking surface.

Top lightly: Try mozzarella, pepperoni, mushrooms, peppers or spinach and a low-sugar sauce. Avoid overloading the crust.
