Roasted Garlic Caprese Dip

Roasted garlic, tomatoes, basil, and a ridiculous amount of melty cheese. This is basically caprese salad’s much more indulgent cousin—and I’m not mad about it.

I found this one at Half Baked Harvest. It’s warm, cheesy, garlicky, and made for scooping up with toasted bread or crackers.

Recipe Inspiration

What’s in it

  • Roasted garlic and shallots
  • Cherry tomatoes
  • Cream cheese and mayonnaise
  • Fresh basil and thyme
  • Parmesan and mozzarella
  • Olive oil, salt, pepper, and optional chili flakes

Make It Your Own

Change the cheese: Mozzarella gives you that classic caprese feel, but another good melting cheese can work if that’s what you have.

Adjust the heat: Add chili flakes if you want a little kick or leave them out completely.

Serve it your way: Toasted bread is pretty hard to beat, but crackers, crostini, or sturdy vegetables can all get in on this.

Laura’s Tip

Roast the garlic until it’s really soft and mashable—that mellow roasted flavor is a big part of what makes this dip so good. And when the directions say to ‘pull the tomatoes out,’ they mean pull the baking dish out of the oven, not remove the tomatoes from the dish. I learned that wording the confusing way.
