Some recipes feed you. Some recipes bring someone back into the kitchen for a little while.
Not long before my mom passed away, I found her meatloaf recipe. It wasn’t written out in her handwriting or tucked into a family recipe box. It was this old Biscuit-Wrapped Meat Loaf recipe—the one she had made for us. Finding it meant I finally had the recipe for a meal that tasted like my childhood.
So this video is a little different for me. I’m making Mom’s meatloaf. And while it may just look like meatloaf wrapped in biscuit dough and cheese, for me, it’s a whole lot more than dinner.
Food has a funny way of holding onto people for us.
The Recipe I Found

The original recipe clipping I found for the meatloaf my mom made
Mom’s Recipe
- 2 eggs
- 1 cup milk
- ⅔ cup dry bread crumbs
- 2 lb. ground beef
- ¼ cup chopped onion
- 1 tsp salt
- ½ tsp garlic salt
- ½ tsp dry mustard
- ¼ tsp pepper
- 2 tsp Worcestershire sauce
- 1 cup Bisquick baking mix
- ¼ cup cold water
- 4 slices (¾ oz each) process American cheese
Directions
- Preheat the oven to 375°F.
- Mix the eggs, milk, bread crumbs, ground beef, onion, salt, garlic salt, dry mustard, pepper, and Worcestershire sauce. Shape the mixture firmly into an 8 x 5-inch loaf and place it in a shallow baking dish.
- Bake uncovered for 1 hour, then spoon off the fat.
- Mix the baking mix and water until a soft dough forms; beat vigorously for 20 strokes. Gently smooth the dough into a ball on a floured, cloth-covered board. Knead 5 times.
- Roll the dough into a 12-inch circle and cut it into 4 equal parts.
- Alternate the cheese slices and dough quarters over the loaf, overlapping the rounded edges of the dough over the points of the cheese. Prick the dough with a fork.
- Return to the oven and bake until the biscuit topping is golden brown, about 15 minutes. Serve with catsup, if desired.
No Bisquick? No Problem.
To replace 1 cup of Bisquick, combine 1 cup all-purpose flour, 1½ tsp baking powder, ½ tsp salt, and 1 tbsp oil, melted butter, or shortening.
High-Altitude Directions From the Original Recipe
